Recipe of the Month – No Bake Pumpkin Dessert

Ingredients:

Graham cracker pie crust

½ c. sugar

1 ¾ oz. instant vanilla pudding mix

1 ½ c. nonfat milk

1 c. pumpkin puree (not pumpkin pie mix)

1 tsp. pumpkin pie spice

8 oz. cream cheese softened

1 tsp. vanilla extract

8 oz. container Whipped Topping

Grated chocolate or mini chocolate chips for garnish (if desired)

Directions:

  1. Add pudding mix, milk and whisk until smooth and lightly set.  Add the pumpkin puree and pumpkin pie spice and mix well.  Carefully pour and spread over crust.
  2. Place the cream cheese in the bowl and beat with a hand mixer until smooth.  Add ½ cup sugar and vanilla and beat until well combined.  Fold in half of the whipped topping.  Spread over pumpkin layer in the pie crust.
  3. Spread the remaining whipped topping over the top of the cream cheese layer.  You can grate some chocolate over the top if you want or add mini chocolate chips for a garnish.

Keep refrigerated until ready to enjoy!
