Recipe of the Month – No Bake Pumpkin Dessert
Ingredients:
Graham cracker pie crust
½ c. sugar
1 ¾ oz. instant vanilla pudding mix
1 ½ c. nonfat milk
1 c. pumpkin puree (not pumpkin pie mix)
1 tsp. pumpkin pie spice
8 oz. cream cheese softened
1 tsp. vanilla extract
8 oz. container Whipped Topping
Grated chocolate or mini chocolate chips for garnish (if desired)
Directions:
- Add pudding mix, milk and whisk until smooth and lightly set. Add the pumpkin puree and pumpkin pie spice and mix well. Carefully pour and spread over crust.
- Place the cream cheese in the bowl and beat with a hand mixer until smooth. Add ½ cup sugar and vanilla and beat until well combined. Fold in half of the whipped topping. Spread over pumpkin layer in the pie crust.
- Spread the remaining whipped topping over the top of the cream cheese layer. You can grate some chocolate over the top if you want or add mini chocolate chips for a garnish.
Keep refrigerated until ready to enjoy!
