October Recipe of the Month: Overnight Oats

These can be frozen or made and kept in the refrigerator for up to 5 days.

Ingredients – Makes 8 servings 

24 oz container vanilla yogurt 

4 cups old fashioned oats 

1 cup 2% milk 

¼ cup roasted unsalted pepitas 

¼ cup raw sliced almonds 

4 teaspoons chia seeds 

1 pint of fresh blueberries 

½ cup natural peanut butter 

Materials – 8 small containers with lids 

In a bowl, mix yogurt, oats, and milk to desired consistency. 

  1. Add pepitas, sliced almonds, and chia seeds and stir.
  2. Spoon into containers. 
  3. Top each container with ¼ cup of blueberries and 1 tablespoon peanut butter. 
  4. Add lids and freeze. 

 

To Enjoy 

1. Thaw 12 hours (or overnight) in the refrigerator.
