June 2024 Crockpot Recipe - Lemon Chicken

Ingredients

• 2 pounds boneless skinless chicken thighs (or chicken breasts)

• 1 red bell pepper, sliced

• 1 yellow bell pepper, sliced

• 1 yellow onion, diced

• 1 lemon juiced

• 1⁄2 cup pitted green olives

• 28 oz can stewed tomatoes, undrained

• 3 tablespoons extra virgin olive oil

• 1 teaspoon rosemary

• 1 teaspoon garlic powder

• 1 teaspoon pepper

• 1 teaspoon Kosher salt

 

1. Add all ingredients to your crockpot.

2. Cook on low setting for 4-6 hours.

3. Slice or shred the chicken and mix with vegetables and sauce in crockpot.

4. Enjoy
