August Recipe of the Month: Chicken Bacon Ranch Foil Packets

Ingredients:

6 TBLS. Melted butter

2 TBLS. Ranch Seasoning

4 Boneless skinless Chicken Breast 4-6 oz. each

1 LB. Red Potatoes, washed quartered

1 Cup Shredded Cheddar Cheese or Cheese of your choice

4 Slices bacon cooked and crumbled

Nonstick cooking spray

Salt & Pepper to taste

4 large square of Aluminum Foil

Directions:

  1. Preheat oven to 425 degrees or grill to medium high heat.
  2. In a small bowl whisk together the butter, ranch seasoning, and the salt & pepper.
  3. Spray the 4 squares of foil with the nonstick cooking spray.
  4. Put the potatoes in a bowl and drizzle with 4 TBLS. Of the ranch butter.  Toss to coat evenly.
  5. Put chicken breasts onto the foil squares and season with salt & pepper.  Divide the potatoes evenly among the foil squares and arrange them around the chicken.
  6. Drizzle the remaining 2 TBLS. of butter over the chicken breasts.  Fold the edges of the foil over the chicken and potatoes to make a packet.  Seal the edges good to prevent leaking.
  7. Bake for 45 minutes or grill for 30 minutes.  Open the packets and put the cheese over the chicken and potatoes.  Leave the packets open and cook in oven or grill for 2-3 minutes or until the cheese melts.  Sprinkle with bacon and serve.
